Born & raised in Machida, Japan, Chef Nobuo Fukuda struggled to fit within the strict culture & moved to the United States to pursue a different life. Over the years, he became a self-taught chef, returnign often to Japan to source & learn about ingredients. He would combine these Japanese ingredients with Western execution and vice versa, providing guests with a taste of both worlds. His dream & hope was to always be 'kakehashi,' to bridge the gap between Japanese & American cuisine.
In 2007, Chef Nobuo was awarded the James Beard Awards for Best Chef: Southwest.
